Here is the star of Utep’s Guys & Dolls Josey Mitchell. I have a funny story about this shoot. I can’t wait to blog her full session and share the story behind it. For now, here is ONE (there are many) of my favorites.
Here is my latest Engagement Session. Alba & Rusty were so much fun to shoot. We laughed and goofed around the entire time. Can’t wait to shoot their wedding in December!

I grew up with this chicken salad, except we ate it with store bought Mayo and a side of tostadas! Since I’ve been Paleo, this salad is one of the things I’ve missed most. I found a paleo recipe for mayo and the first thing I thought was being able to make and enjoy this childhood salad! It’s simple, delicious and HEALTHY! Enjoy! Chicken & Seasoning:
I like to make a lot so I have left overs for the rest of the week!

I used 8 chicken breasts

Garlic, bay leaves, salt & pepper. Combine all and boil chicken until fully cooked.
For Salad:

Chopped green onions

Black Olives

Green olives, pickles, carrots & celery too (I didn't realiaze I ran out)

Combine all ingredients cover and place in fridge to cool
Next, shred the chicken. I like to use two forks to make shredding easier!

Combine salad and chicken and place in fridge to cool off. The chicken will be hot.
Now, let make Paleo Mayo! It’s delicious, and I don’t know if it’s been so long since I’ve had mayo, but I actually think it tastes better than store bought mayo. Don’t get fooled by the “Olive Oil” types at the store, they are made with a bunch of junk! READ YOUR LABELS! (Ok, enough paleo preaching.)

1 egg at room temperature, 1/2 tsp dry mustard, 1/2 tsp salt, 2 tbsp lime juice at room temp 1-1/4 cups light olive oil (not extra virg) at room temp
Ok, photos first then directions:



Place the egg, dry mustard, salt and lime juice. Add 1/4 cup of the oil and whirl until well mixed-approx 30 seconds.
OK! THE IMPORTANT PART!!!!! Incorporate the remaining 1 cup oil into the mixture. TO DO THIS, you must pour very, very, slowly…the skinniest drizzle you can manage and still have movement in the oil. This takes about 3 minutes.

Yummy! Paleo Mayo!
Last thing is to add mayo to chicken. Cover, and refrigerate for a few hours.

This salad is absolutely delicious when it’s really cold!
